Unser V-Lachs ist ein komplett veganes Fischbrötchen und geht geschmacklich in die Richtung vom Stremellachs. 
Basis des Brötchens ist Karotte welche wir backen, einlegen, hobeln und zusammen mit einer geheimen Mixtur aus Algen und Ölen einvakuumieren und ziehen lassen. Und Zack bumm kommt ein veganes Brötchen heraus welches sowas von nach Meer schmeckt. Dazu noch veganer Caviar von caviart_seaweed_caviar , selbstgemachte Agave-Senf-Dill Sauce, Bäckerbrötchen der Bäckerei Fischer aus Meldorf, Salat von himbeertobi und fertig ist das „Visch“Brötchen.

A quick and easy summer lunch! I'm sorry I don't have a RECIPE, I mixed everything to taste and YOU CAN TOO!

For the shrimp salad I used:

1/4 pound cooked shrimpies
1 stalk diced celery plus green onions, chives, tarragon, dill
mayo + dijon
a lil seasoning salt

Mixed everything together, adjusted to taste, and scooped into brioche slider buns (before adding the filling I buttered the outside of the buns and pan fried to crisp warm them). Topped with more herbs, thin sliced radish, and caviart_seaweed_caviar seaweed pearls! Served with truffle chips and lemon slices 😎

-Carrot, celery, white onion, mini heirloom tomato, black olive, broccoli and cauliflower. Tossed in jeffs_garden Castelvetrano Olive brine

I love making sushi at home! My husband and I usually have a friendly contest to see who can make the tastiest maki, but tonight we decided to try something new: vegan replicas of the animal-based sushi we used to eat.

First, we used omnifoods.global luncheon patty to make spam musubi. This looked just like spam and had the same salty flavor profile, but it was a bit soft. Next time we'll cook it differently to get a crispy sear on the patty.

Next was a spicy tuna and cucumber roll using goodcatchfoods naked tuna in water. I knew this wouldn't be quite the same as the original roll, since the Good Catch mimics canned tuna, and when we make it again I'll chop it finely for a more uniform texture. But my husband, who was a big tuna lover before becoming vegetarian, really enjoyed it.

Our second roll was a roasted sweet potato and avocado roll, topped with a sweet and salty unagi sauce. This is a classic combination that we make all the time, and despite the simple ingredients it looks and tastes fancy.

Finally, we made a gunkan maki with caviart_seaweed_caviar vegan black seaweed caviar. We've been interested in trying veggie caviar for a while, so when we saw it at a local World Market we had to buy some. This doesn't have the "pop" of fish caviar but the flavor is surprisingly similar. My husband was a big fan of the caviar, and I caught him spooning it onto crackers for a post-dinner snack.

It was really fun trying all these new products tonight. There are so many great vegan substitutes coming onto the market now - and the only way to see if you like something is to give it a try.
